Ingredients With Measurements

  • 1 1/2 pounds cooked shredded chicken breast
  • 1/3 cup mild buffalo sauce
  • 1 tablespoon plain Greek yogurt
  • 1 medium sweet potato, peeled and diced
  • 1 teaspoon olive oil
  • 1/4 teaspoon salt
  • 2 cups sliced celery
  • 1 cup shredded carrots
  • 1/3 cup plain Greek yogurt
  • 1 tablespoon low-fat milk
  • 1 teaspoon ranch seasoning
  • 1 tablespoon chopped chives

Directions

  1. Toss diced sweet potato with olive oil and salt.
  2. Roast sweet potato at 400 degrees F for 18 to 20 minutes, until tender.
  3. Warm shredded chicken in a skillet over medium heat.
  4. Stir buffalo sauce and Greek yogurt into the chicken until evenly coated.
  5. Combine celery and shredded carrots for the vegetable portion.
  6. Mix Greek yogurt, milk, ranch seasoning, and chives for the condiment cup.
  7. Assemble each BariBowl II with 50% buffalo chicken, 20% roasted sweet potato, and 30% celery-carrot vegetables.
  8. Reheat the chicken and sweet potato without the ranch cup.
