Ingredients With Measurements
- 1 1/2 pounds cooked shredded pork tenderloin
- 1 tablespoon orange juice
- 1 tablespoon lime juice
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon salt
- 1 teaspoon olive oil
- 2 cups shredded cabbage
- 1 red bell pepper, sliced
- 1 poblano pepper, sliced
- 3/4 cup cooked pinto beans
- 2 tablespoons chopped cilantro
- 1/3 cup plain Greek yogurt
- 1 teaspoon lime zest
Directions
- Toss shredded pork with orange juice, lime juice, cumin, chili powder, and salt.
- Heat olive oil in a skillet over medium-high heat.
- Add pork and cook for 5 to 6 minutes, until warmed with crisp edges.
- Remove pork and add bell pepper and poblano pepper to the skillet. Cook for 5 minutes.
- Toss shredded cabbage with the warm peppers.
- Stir pinto beans with cilantro.
- Mix Greek yogurt and lime zest for the condiment cup.
