Ingredients With Measurements

  • 1 1/2 pounds salmon fillets
  • 2 tablespoons low-sodium teriyaki sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced
  • 3 cups broccoli florets
  • 1 cup shredded carrots
  • 1 teaspoon olive oil
  • 1 cup cooked brown rice
  • 1 tablespoon sliced green onion
  • 1/3 cup plain Greek yogurt
  • 1 tablespoon low-sodium teriyaki sauce
  • 1 teaspoon rice vinegar

Directions

  1. Brush salmon with teriyaki sauce, sesame oil, ginger, and garlic.
  2. Bake salmon at 400 degrees F for 12 to 14 minutes, until it flakes easily.
  3. Steam broccoli for 4 to 5 minutes, until tender-crisp.
  4. Toss broccoli and shredded carrots with olive oil.
  5. Stir cooked brown rice with sliced green onion.
  6. Mix Greek yogurt, teriyaki sauce, and rice vinegar for the condiment cup.
  7. Flake the salmon into large pieces.
  8. Assemble each BariBowl II with 50% salmon, 20% brown rice, and 30% broccoli-carrot vegetables.
