Ingredients
- 1 sweet potatoes, sliced in 1/4″ slices
- 2 tablespoons olive oil
- salt to season
- 4 small avocados
- 1/2 cup cilantro
- 3 tablespoons juice of 1 lime

- 1/2 teaspoon red pepper flakes
- 1lb. large raw shrimp, peel and deveined
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon sea salt
- 1/4 teaspoon chipotle chili powder
- 1 tablespoon olive oil
Directions
Step 1:Preparing the Sweet Potato Bites
1.1. Preheat the oven to 425°F. 1.2. Cover the bottom of a baking sheet with tin foil, and brush 1 tablespoon of olive oil over the entire pan. 1.3. Arrange the sweet potato slices on the prepared baking sheet. 1.4. Brush the tops of the sweet potato slices with the remaining olive oil and season with salt. 1.5. Bake for 10 minutes, then flip the sweet potatoes and bake for an additional 5-7 minutes. 1.6. Remove from the oven and let the sweet potato bites sit.
Step 2: Making the Guacamole
2.1. In a food processor or blender, combine avocado, cilantro, lime juice, red wine vinegar, red pepper flakes, and salt. 2.2. Lightly pulse until the mixture is smooth and set the guacamole aside.
Step 3: Cooking the Shrimp
In a large bowl combine smoked paprika, ground cumin, sea salt, and chipotle chili powder. Toss in your shrimp to pick up those flavors and then into a large skillet over medium-high heat, and add olive oil. 3.2. Add the shrimp, seasoned with smoked paprika, ground cumin, sea salt, and chipotle chili powder. 3.3. Cook the shrimp for 2-3 minutes per side.
Step 4: Assembling the Bites
4.1. Top each sweet potato slice with a dollop of guacamole and one cooked shrimp.
Step 5: Serving
